New Robust Food & Beverage Program Scheduled for Historic Faust Hotel
The highly anticipated Faust Hotel in New Braunfels is pleased to share additional details about its food and beverage offerings at the property, including its signature restaurant Wilhelm & Werner, a refreshed Magnolia Patio, the Prince Solms Bar – an upgraded lobby bar – and Walter’s, a basement-level speakeasy. The hotel, along with its restaurants, will open later this spring. Additional details and opening date to follow.

The restaurants and bars at the Faust Hotel are overseen by Michael Moore, director of food and beverage for the property. Michael is known for his accomplishments at his previous posts at Luce Ristorante e Enoteca, the Grand Hyatt San Antonio, and more. The kitchen is run by executive chef Adam Gilly, a 30-year industry veteran with a specialty in Texas ingredients and French culinary technique. His epicurean philosophy is ranch-driven, agricultural, seasonal, and rooted in craft. Adam is creating a dining experience at the Faust that is warm, soulful, and unmistakably local, interpreting brasserie spirit through Texas ingredients and modern style.

Our menus are thoughtfully designed to represent who we are and where we’ve been, and we can’t wait for our spaces to become a hub for the city once more.”
WILHELM & WERNER
Described as a Texas Brasserie with European influences, the hotel’s signature restaurant will feature refined takes on Lone Star classics. Wilhelm & Werner will be open for lunch and dinner service seven days a week. Guests will be treated to menu offerings such as, but not limited to:

Wilhelm & Werner’s will also feature a robust beverage menu with craft cocktails and classics alike, including familiar favorites like the Sidecar, a Manhattan, and an Old Fashioned, in addition to unique creations like:

Cucumber Orchid Martini – crisp cucumber vodka stirred with dry vermouth and elderflower

Prickly Pear Blossom – vibrant prickly pear and orange blossom gin shaken with fresh lime and aperitivo

Speakeasy Bramble – juicy gin built over crushed ice with fresh blackberry and a crème de mûre drizzle
Guests will also be able to order from a selection of domestic and foreign beers, in addition to an extensive wine list. The restaurant’s design is light and airy, with abundant natural light, an indoor-outdoor fireplace, long bar, lounge seating and ample patio seating. Wilhelm & Werner will seat 130 guests across the main dining room, patio and bar. The hotel’s signature restaurant will open with the hotel later this spring, with brunch launching at a later date. WALTER’S
Beneath Wilhelm & Werner lies Walter’s, an intimate basement-level speakeasy named for the Faust’s founder, Walter Faust. The bar will feature craft cocktails and delectable bites. The fare at Walter’s includes a variety of indulgent late-night treats, including:

Popcorn Buttered Lobster – warm lobster claw & knuckle meat gently poached in popcorn-infused butter, served with fresh-popped corn tossed in the same butter, finished with a lemon and brown butter

Confit Duck Tacos – crisp hand-rolled taquitos filled with confit duck and Oaxacan cheese, served with Avocado Crema and sotol-fired Salsa Negra.

Poutine of the Night – pommes frites with cheese curds and a rotating nightly gravy
The beverage menu at Walter’s is designed to tell the story of The Faust’s history, with cocktails named after significant moments in time, as well as key figures in the hotel’s past that may still be there after all this time. This creative nod to the Faust’s legacy includes libations, like:

The Move – 1928 – 30-day barrel-aged Balcones bourbon batched with toasted mesquite staves and wildflower honey syrup, Angostura & orange bitters, and absinthe rinse. After his father’s death, Walter Faust rolled the family home across the street on logs—clearing the site for what became the Travelers Hotel, later renamed the Faust Hotel

Elevator Operator – cold-brew coffee liqueur, Irish cream, vodka, smoked cinnamon infusion. Countless guests swear Walter—top hat and all—still runs the original 1929 Otis elevator at 3 a.m.

The Rebirth – 2026 – Aviation gin stirred with house blood orange cordial and vanilla bean syrup, served in a chilled coupe with a clear ice puck dusted in 24k edible gold leaf and Texas wildflower petals. After 97 years, the Faust rises again—and Walter finally gets his speakeasy.
Walter’s is a small, but comfortable space that will feature club chairs, two-top tables and a corner bar. The cozy speakeasy will accommodate 20 guests and will open shortly after the hotel’s grand opening.
Walter’s will be open for walk-ins, but reservations are strongly encouraged.
MAGNOLIA PATIO & PRINCE SOLMS LOBBY BAR

In addition to Wilhelm & Werner and Walter’s, the reimagined Faust Hotel will re-open with the Prince Solms Lobby Bar, a cozy walk-up space for hotel guests to take advantage of. It will also service the Magnolia Patio, an existing outdoor space that has been refreshed during the remodel. Guests and locals alike will be able to enjoy bites like a Hill Country Cheese Board, Whipped Ricotta, an assortment of flatbreads and more. Magnolia Patio and the lobby bar will be available to guests of the hotel and the public upon the Faust’s reopening.
