This four-course dinner will pair a sumptuous menu created by Executive Chef Mark Scheck with several of Carter Creek Winery’s outstanding wines
Hotel Valencia Riverwalk, by Valencia Hotel Collection, is hosting a four-course Wine Dinner paired with award-winning Carter Creek wines on Thursday, Jan. 22. 2026, from 6-9:30 p.m. in Dorrego’s restaurant. Executive Chef Mark Scheck has created an elevated menu showcasing refined flavors and artful presentation, all designed to complement each wine pairing beautifully.

Oysters on the Half Shell with Pomegranate Mignonette
First Course
Cold-Smoked Poached Pear Salad with Burrata, Arugula, Prosciutto,
Shaved Parmesan and White Balsamic Vinaigrette
Second Course
Sous Vide Duck Breast with Parsnip Pureé, Rainbow Swiss Chard,
Port Cherry Demi, and Thyme Risotto Croquette
Third Course
Smoked Lamb Chops with Sweet Potato Pureé, Fava Bean and
Wild Mushroom Ragout and Red Wine Rosemary Jus
Fourth Course
Port-Infused Chocolate Mousse with Marinated Fresh Berries,
White Chocolate Blossoms, Blueberry Sauce and Pistachio Dust
