San Antonio culinary & Day of the Dead enthusiasts are invited to a vibrant evening celebrating life, memory and the timeless flavors of Mexico at The Cherrity Bar, featuring Chef Paul Morales, founder of Ancient Heirloom Grains and Tacos Cucuy. This very special Día de los Muertos-inspired dinner on November 6th at 7 pm honors tradition through bold color, texture and taste — where every dish tells a story and every bite feels like an offering.

 

 

 

 

Joining the Past & Present Through Ancestral Foodways

With a deep reverence for ancestral foodways and a modern touch that’s uniquely his own, Chef Paul reimagines heirloom ingredients into soulful works of art. This exclusive, one-night-only pop-up will feature a multi-course tasting menu inspired by the harvest, spirit, and symbolism of Mexico’s most cherished holiday — a night when we celebrate those who came before us through the language of food.

Tortillas Cerimoniales

A Calaveras-inspired amuse-bouche.

Milpa Terrine (Vegan)

Pumpkin, hominy, heirloom beans and corn aspic — served with sweet potato purée and spiced popcorn for a playful, earthy balance.

Pozole

Rich cabrito stew with hominy, onion, cilantro, and chiles — comforting and deeply rooted in Mexican culinary ritual.

Chile Relleno (Vegetarian)

Stuffed with cilantro-lime rice, sweet potato, corn, onion, garlic, and topped with Chef Morales’ luxurious signature mole negro.

Pumpkin Tres Leches (Vegetarian)

A decadent cake with cajeta, sugared pumpkin and spiced pepitas.

Beverage Note
