Glendalough Rose Martini

1.5 oz. Glendalough Wild Rose Gin

0.5 oz. Dry Vermouth

0.5 oz. Elderflower Liqueur

Lemon twist, garnish
METHOD: Combine ingredients in a mixing glass with ice and stir until very cold. Strain into a martini glass and garnish with a lemon twist.

Rose and Raspberry Fizz

1.5 oz Glendalough Wild Rose Gin

.5 oz Raspberry Syrup

.5 oz Aperol

1.5 oz Soda Water
METHOD: Shake all ingredients (except soda) with ice. Strain into a tall ice filled glass. Add the soda, then garnish with a raspberry and a freshly torn and slapped sprig of mint.
Bouquet in a Bottle
This intensely floral gin is created by vapor-distilling carefully tended flowers from an Irish rose garden with wild roses and botanicals from the Wicklow mountains. The gin is then further infused with more roses after distillation, enhancing the flavors and giving it that gorgeous pink color.
