Empress 1908 Indigo Gin
Distilled in copper-pot stills, Empress 1908 Gin contains eight signature botanicals, including exotic butterfly pea blossom, discovered in a tea blend served at the Empress Hotel in Victoria, B.C. Indigo Gin Cocktails:
THEODORA
Description: For lovers of all things floral, the Theodora cocktail is calling your name! Lavender, rose and honey make this fragrant sip perfect for the spring season. Created by Victoria Distillers.
Ingredients:
- 2 oz Empress 1908 Indigo Gin
- 3⁄4 oz Fresh Lemon Juice
- 3⁄4 oz Lavender Honey Syrup
- ¼ oz Rose Water
- Garnishes: Lavender Sprig or Edible Flower
Method: Rinse a chilled coupe glass with rose water. Add the gin, lemon and syrup in a cocktail shaker with ice and shake vigorously. Strain into the coupe. Garnish with a sprig of lavender or edible flower.
MISS INDEPENDENT

Ingredients:
- 1 oz Empress 1908 Indigo Gin
- 1 oz Cointreau
- 1 oz Lillet Blanc
- 1 oz Lemon Juice
- 1 Dash Absinthe
- Organ Twist
Method: Combine ingredients in a shaker. Shake all ingredients with ice. Strain into a chilled glass and garnish with an orange twist.
COOL AS A CUCUMBER
Description: A fresh twist on the beloved gimlet cocktail, the Cool As A Cucumber brings tart, herbal spring flavors into the spotlight.
Ingredients:
- 1 1⁄2 oz Empress 1908 Indigo Gin
- 1 oz Lemon Juice
- 1 oz Simple Syrup
- 4-5 Cucumber Slices
- 6-7 Basil Leaves
Method: Muddle the cucumber slices in the bottom of your
shaker. Add the remaining ingredients and shake on ice. Strain into
a chilled rocks glass. Garnish with a basil leaf and cucumber ribbon.

Elderflower Rose Gin Cocktails:
SHADES OF PINK
Description: Reinvent the beloved Tom Collins with Empress Elderflower Rose— sip on layers of bright lemon, a touch of sweetness and our own unique floral blend!
Ingredients:
- 1.5 oz Empress 1908 Elderflower Rose Gin
- 1 oz Fresh Lemon Juice
- 1 oz Simple Syrup
- Soda Water
Method: Shake ½ oz Empress Elderflower Rose Gin, lemon and simple syrup on ice. Strain into a Collins glass over fresh ice. Top with soda and float remaining 1 oz gin on top. Garnish with a lemon wheel and lavender sprig.
EMPRESS ELDERFLOWER SOUR
Description: Delicate, decadent and dressed to impress, the Elderflower Sour brings forth the best of our botanical recipe.
Ingredients:
- 2 oz Empress 1908 Elderflower Rose Gin
- ¾ oz Fresh Lemon Juice
- ¾ oz Simple Syrup
- 1 oz Egg White (or Aqua Faba)
Method: Add all ingredients to a shaker with ice. Shake and strain to remove ice. Shake again without the ice. Fine strain into a chilled coupe glass. Garnish with rose petals.
ELDERFLOWER ROSE 75
Description: Sparkling and celebratory, our Elderflower Rose 75 takes a well-loved staple and adds a special floral touch.
Ingredients:
- 2 oz Empress 1908 Elderflower Rose Gin
- ¾ oz Fresh Lemon Juice
- 0.5 oz Simple Syrup
- Sparkling Wine
Method: Shake on ice, fine strain into a chilled flute, top with sparkling wine. Garnish with a lemon twist.

Since 1908, travelers from around the world have fallen in love with the Fairmont Empress Hotel for its majestic grandeur, picturesque vistas, and incomparable afternoon tea service. Overlooking the Inner Harbour in Victoria, British Columbia, this iconic destination has hosted royalty, dignitaries, and discerning explorers for over a century.
Empress Name
In 2016, we set out to create a gin unlike any other. Having always looked to our surroundings for inspiration, it was only natural that the iconic Fairmont Empress Hotel and its renowned afternoon tea program called to us as the perfect place to spark our creativity. Our Master Distiller explored how each one of their teas played with our carefully selected botanicals, leading us on a multi-sensory journey. Finally, we settled on the extraordinary combination of Empress Signature Blend Tea and butterfly pea blossom, which was discovered in a blend called Blue Suede Shoes. In 2017, Empress 1908 Indigo Gin was born.
