Copalli Rum Shares a Sustainable Cocktail for National Rum Day August 16th
Copalli Rum is ready for National Rum Day with a classic Mai Tai!
Copalli Rum, an organic rum, is commitment to sustainability. Even long before the Distillery was created, sustainability has been behind each bottle. Copalli is a clean rum made from only three ingredients: organic sugar cane, pure water collected from the canopy of the Belizean rainforest and yeast.
The Copal Tree Distillery is designed to be zero impact. The cane is harvested by hand and juiced within two hours. The leftover stalks are dried and used to fuel the distillery boiler, which heats the stills. Then, the ash is used to fertilize the cane fields. Any wastewater from the Distillery goes through a filtration system into retention ponds.
But even before there was a Rum, there was a commitment to protect the rainforest by the Copalli founders, dating back twenty years. That commitment extends to the Copalli community through sustained employment, training and support for the education system for boys and girls.
As for which cocktail is best for National Rum Day? We asked Julie Reiner, owner of Clover Club.
“One of my favorites, the Mai Tai started as a rum cocktail so popular it was rumored to have depleted world rum supplies in the ‘40s and ’50s. When the cocktail was invented by Victor J. Bergeron — aka Trader Vic – it wasn’t the overly sweet concoction which became popular in the ‘80s, but a simple drink created to showcase the flavor of an aged rum. like the way both Copalli Rums work together to make a truly delicious sip – Julie Reiner, Clover Club and Copalli Brand Ambassador
Classic Trader Vic Mai Tai
1 oz. Copalli White Rum
1 oz. Copalli Barrel Rested Rum
½ oz. Orange Curacao
¾ oz. Lime Juice
½ oz. Orgeat
¼ oz. Simple Syrup
Shake and strain over crushed ice.
Garnish with a mint sprig and for a real flourish, add a lime wheel and an orchid.
