Here’s their chef’s best chocolate cake recipe to try at home:
Flourless Chocolate Cake
1 pound unsalted butter
1 pound granulated sugar
8 ounces fresh brewed dark coffee
1 pound dark chocolate couverture
9 large whole eggs
Yields: One 9″ Spring Form Cake Mold
Step 1: In a water bath, mix and melt together the butter, granulated sugar, and fresh coffee
Step 2: Pour butter, sugar, and coffee mixture over the chocolate and stir until chocolate melts. Set aside to cool
Step 3: Whisk together the eggs, and slowly pour while mixing into the chocolate mixture
Step 4: Spray a 9″ spring form cake mold with nonstick spray and line the bottom with parchment paper. Pour chocolate cake mixture.
Bake at 300°F for about 35 Minutes, until it sets.
Refrigerate for a few hours, unmold, and serve with seasonal berries.
