Luckily, National Cheese Lover’s Day arrives on January 20 to bring awareness to this delicious plight!

For those of us who must live every day being completely in love with all things cheese, it can get difficult trying to find new ways to incorporate it into every meal. So, for those of us who desperately need new yummy ideas, here are 3 cheesy recipes that can be made in just 45 minutes or less!

Triple Cheese Ravioli Cupcakes

Three Bridges pasta and cheese recipes

This meal only takes 20 minutes to prep and another 20 minutes to cook! All you need to do is preheat your oven to 400°F and line a muffin tin with parchment. Use 1 minute to cook Three Bridges Triple Cheese Ravioli before draining and letting it cool. Heat 1/4 of a cup of olive oil in a large skillet and throw in some minced garlic until it becomes fragrant. Cook a pound of baby spinach, mix it with an egg and parmesan cheese and assemble your ravioli cupcake. Top with Mozzarella cheese, bake for about 20 minutes, and enjoy the cheesy goodness! 

Ingredients:
1-9 oz pkgThree Bridges Triple Cheese Ravioli
1-15 oz tubThree Bridges Heirloom Marinara Sauce
1/4 cupolive oil
2 clovesgarlic, minced
1 lbbaby spinach
1egg, lightly beaten
1/2 cupparmesan cheese, grated
1 1/2 cupmozzarella cheese, grated
kosher salt and pepper to taste
Instructions:
  1. Line 5 cups of a muffin tin with parchment as a liner. Preheat the oven to 400° F and position the rack in the middle.
  2. Cook the Three Bridges Triple Cheese Ravioli 1 minute less than the package directions. Drain the ravioli well and let cool.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add garlic and cook for 30 seconds until fragrant, stirring constantly.
  5. Add in the spinach and season with salt and pepper. Stir and cook for 3 minutes until wilted. Remove spinach from skillet and drain any excess liquid through a strainer.
  6. Place the drained spinach in a bowl and mix in the egg and parmesan cheese well.
  7. To Assemble and Serve: Spoon 1 Tablespoon of the Three Bridges Heirloom Marinara Sauce into each of the 5 muffin cups.
  8. Place a Three Bridges Triple Cheese Ravioli on top.
  9. Top with 1 Tablespoon of the spinach and egg mixture.
  10. Top with 1 Tablespoon of the Mozzarella cheese.
  11. Top with another Three Bridges Triple Cheese Ravioli.
  12. Spoon 1 Tablespoon of the Three Bridges Heirloom Marinara Sauce on top.
  13. Top with 1 Tablespoon of the Mozzarella cheese.
  14. Repeat for all 5 muffin cups.
  15. Slide the muffin tin into the oven and bake until hot and bubbling, about 20 minutes.
  16. Heat up the remaining tomato sauce in a small saucepan and serve on the side. Enjoy!

Easy Ziti-Style Rainbow Triple Cheese Tortellini in a Mug

For this cheesy 40 minute dish, preheat your oven to 400°F and cook Three Bridges Rainbow Triple Cheese Tortellini one minute less than the package directions. Heat olive oil in a large skillet and cook some minced garlic for 30 seconds. Wilt your spinach and mix it well with parmesan cheese. Combine marinara sauce with Alfredo sauce to create a creamy marinara, add all of your ingredients into your mug of choice and top with mozzarella cheese. Place the mugs in the oven and bake for about 20 minutes for a warm and cheesy meal!

Ingredients:
1-18 oz pkgThree Bridges Rainbow Triple Cheese Tortellini
1-15 oz tubThree Bridges Heirloom Marinara Sauce
1-10 oz tubThree Bridges Alfredo Sauce
¼ cupolive oil
2 clovesgarlic, minced
1 lbbaby spinach
1 cupparmesan cCheese, grated
2 cupmozzarella cheese, shredded
to tastekosher salt & black pepper
Instructions:
  1. Preheat the oven to 400°F with the rack in the middle position.
  2. Cook the Three Bridges Rainbow Triple Cheese Tortellini one minute less than the package directions. Drain pasta and set aside to cool.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds until fragrant, stirring constantly.
  4. Add in the spinach and season with salt and pepper. Stir and cook for 3 minutes until wilted. Remove spinach from skillet and mix well with the parmesan cheese. Set aside.
  5. TO ASSEMBLE
  6. Mix together the Three Bridges Heirloom Marinara Sauce and the Three Bridges Alfedo Sauce together to make a Creamy Marinara Sauce.
  7. Spoon 1 tbsp of the Creamy Marinara Sauce mixture into the bottom of a 12-16 oz oven-proof coffee mug or ramekin.
  8. Place a handful of Three Bridges Rainbow Triple Cheese Tortellini on top (3-4 depending on mug size).
  9. Top with 1 tbsp of the Spinach mixture.
  10. Top with 1 tbsp of the Mozzarella cheese.
  11. Repeat for the rest of your coffee cups.
  12. Place all the coffee cups on a sheet pan and place into the oven. Bake until hot and bubbling, about 20 minutes. Carefully remove from oven and let set, about 2 minutes.
  13. Serve with any extra Creamy Marinara Sauce and Enjoy.

Triple Cheese Ravioli with Sausage and Peppers

Only have 30 minutes to make dinner? Well for this tasty dish, you only need 25. Cook your Three Bridges triple cheese ravioli according to the instructions on the packet. At the same time, heat olive oil in a sauté pan over medium heat. Add in crumbled Italian sausage and cook until browned. Toss in some sliced bell pepper, minced garlic, a pinch of chili flakes, plum tomatoes, and cook for 10 minutes. Add the cooked ravioli, gently toss it all together, top it with parmesan cheese and use the last of your 5 minutes to pour yourself a glass of victory wine!

Ingredients:
9 oz pkgThree Bridges Triple Cheese Ravioli
1⁄2 lbItalian sausage, crumbled
1 can28 oz plum tomatoes in puree
2 clovesgarlic, minced
1bell pepper, either chopped or sliced
1 tbspolive oil
chili flakes
salt and pepper to taste
parmesan cheese
Instructions:
  1. Bring a large pot of water to a boil. Add ravioli and cook according to instructions on package. Drain, cover, and keep warm.
  2. At the same time, heat a sauté pan over medium heat with the olive oil. Add in the Italian sausage and brown.
  3. Add in the bell pepper and sauté with the sausage for 1-2 minutes, add in the garlic, a pinch of salt and pepper, a pinch of chili flakes and the tomatoes and cook for 10 minutes. Remove from heat.
  4. Add cooked ravioli to sauté pan and gently toss together. Season with salt and pepper to taste and garnish with parmesan cheese. Serve immediately & enjoy!
