The Boys Are Back – Seasoned Hospitality Vets to Open Fresh, Chef Driven Dining Experience In San Antonio
Full Belly Cafe and Bar is a collaboration between local Chefs and Restaurateurs Blade Haddock and James Moore, combining experience and passion from their 25 year careers in the restaurant and bar industry with an eagerness to build a community around forward-thinking food from the heart in their hometown of San Antonio.
Opening soon, Full Belly embraces its motto, “Feed your soul. Fill Your Belly.” through hearty, seasonal American cuisine with a global spin. The chef-crafted menu features breakfast, lunch and dinner plates that reflect the owner’s travels and showcase the cultures and cuisines they grew up with in Texas.
Noteworthy menu items include Souffle Pancakes, Gravlax Focaccia, White Balsamic Braised Lamb Shank, Juicy Lucy Patty Melt and Harriet’s Tomato Mayo Club. For dessert, expect Spanish Burnt Cheesecake and Blondie Sundaes. The chef influenced bar program will feature shrubs and syrups made in-house and creative cocktails with freshly squeezed juices. A selection of Texas spirits and craft beers as well as an eclectic wine list have been curated to match the restaurant menu.
The robust dine-in breakfast or grab-and-go morning menu will offer freshly baked goods alongside an extensive drinks menu that includes custom blend coffee from local roasters Pulp Coffee as well as specialty creations like Butter Coffee with grass-fed butter and MCT oil and a Creme Brûlée Coffee made with custard and burnt sugar. House-made pastry options will include a variety of donuts, breakfast hand pies and breads baked daily by Pastry Chef Deanna Lansing.
“Every aspect of Full Belly is infused with personality, fun and flavor,” said Blade Haddock, Full Belly’s Chef Owner, who has cooked in and managed kitchens for prestigious chefs including Susan Feniger and Wolfgang Puck and was Operating Partner at Boiler House and Max’s Wine Dive. “This is the fourth restaurant that James and I have worked on together and our first without additional partners, so it’s truly a reflection of our individual strengths, shared flair for playfulness and the synergy we’ve built with each other over the years.”
Chef Moore grew up in San Antonio and spent almost two decades cooking in and leading kitchens in restaurants on the West Coast. Returning to San Antonio, he served as Executive Chef and Operating Partner on the opening team of Max’s Wine Dive, then later opened its sister restaurant Boiler House at the Pearl Brewery. He also opened industry favorite TBA Cocktail Lounge & Snack Bar and Grayze, which was recognized as Best New Restaurant by USA Today and the San Antonio Express-News in 2016.
“The San Antonio dining scene is vibrant but approachable, which inspired us to create a concept that feels one-of-a-kind yet welcoming at all hours of the day,” said James Moore, Full Belly’s Executive Chef Partner. “We’re eager to share this labor of love — and a few cocktails! — with our neighbors soon.”
Full Belly Cafe and Bar will be located at 427 North Loop 1604 West #202 and open Monday through Sunday. During the week, the restaurant will be open early from 7 a.m. with an all-day happy hour until 7 p.m. Full Belly will have late-night hours on weekends and serve brunch on Saturdays and Sundays.
