Winter Citrus Spiced Waffles
1 ½ cup of gluten free baking mix
Juice of 1 Limoneira classic lemon
1 cup of non-dairy milk
1 tablespoon of extra virgin olive oil
1 tablespoon of coconut sugar
1 teaspoon of baking soda
½ teaspoon of pumpkin spice
Pour wet ingredients into a bowl and mix.
Add the dry ingredients to the wet and combine thoroughly.
Cook the mixture using a waffle iron.
Top with your favorite toppings.Enjoy!
Lemon Spinach Artichoke Dip
1 Limoneira lemom
8 oz of cream cheese of choice (Megan uses vegan chive)
2 (14 oz) cans of chopped artichoke hearts
2 cups of spinach
½ cup of shredded cheese of choice
1 teaspoon of minced garlic
¼ teaspoon of black pepper
¼ teaspoon of sea salt
Combine all the ingredients into a large bowl.
Add the juice and the zest from the Limoneira lemon.
Make sure all ingredients are well incorporated.
Add mixture to a ceramic baking dish.
Top with a sprinkle of extra cheese.
Bake at 350 F for 25 minutes.
Enjoy with your favorite chips or crudité!
Cardamom Orange Sugar Cookies
2 cups of blanched almond flour
3 tablespoons of Limoneira orange zest
¼ cup of melted coconut oil
¼ cup of 100% real maple syrup
½ teaspoon of baking soda
1 teaspoon of cardamom
½ teaspoon of cinnamon
¼ teaspoon of nutmeg
2 teaspoons of canned coconut milk
¼ cup of powdered sugar
Pour all dry ingredients into a bowl and mix well.
Add the wet ingredients into the dry and mix well once again.
Chill mixture in the fridge for 15 minutes.
Roll your dough onto a baking sheet and cut out in any shape you desire.
Bake at 350 F for 10 minutes.
Mix two ingredients together.
Top cookies with desired amount.
Orange Spiced Hot Cocoa
2 cups of non-dairy milk
¼ cup of Limoneira navel orange juice
1 cinnamon stick
3 tablespoon of coconut sugar
3 tablespoon of cacao powder
1 teaspoon of whole cloves
1 teaspoon of whole allspice
1. Add the orange juice, cloves, allspice, and cinnamon stick to a pot and let simmer for 10 minutes.
2. Once simmered, strain the mixture.
3. In the same pot, add the coconut sugar and cacao powder to your orange juice mixture and whisk thoroughly.
4. Add your milk and whisk again.
5. Keep warm on low heat.
6. Top with whipped cream and orange zest.
