American Lamb Shanks with White Wine, Fennel and Tarragon

Superior Farms American Lamb

Cooking lamb shanks is really pretty easy. The main thing is to keep them moist and cook them slow and low and your shank will be perfect every time.

  • Prep: 20 mins
  • Cook: 3 hrs 30 mins
  • Yields: 4 servings

4 American Lamb shanks, 1 pound each

Salt and pepper, to taste

Olive oil, as needed

1 fennel bulb, cored and sliced

1 yellow onion, sliced

6 garlic cloves, smashed

3 bay leaves

2 1/2 cups dry white wine

1 cup low-sodium chicken broth

2 tbsp finely chopped fresh tarragon

1. Season lamb with salt and pepper. In a large pot, add oil; brown lamb in batches on all sides. Transfer lamb to a plate. Add fennel and onion to the pot; cook until soft, 6 minutes. Stir in garlic and bay leaves; cook until fragrant, 2 minutes. Add wine and broth; bring to a boil. Turn off heat; return lamb to the pot. Cover and cook at 350ºF until tender, 2-1/2 hours. Transfer lamb to a platter.

2. Simmer sauce over medium heat until reduced by half, 15 to 20 minutes. Stir in tarragon.

3. Serve with orzo.

American Lamb Lollipops with Two Sauces

Superior Farms American Lamb

Lamb loin “lollipops” are the perfect party food, and served with a fresh mint and tomato sauce and a prepared pesto sauce it’s easy to feed a crowd.

  • Prep: 1 hr 15 mins
  • Cook: 35 mins
  • Yields: 8 Servings

½ cup Dijon-style mustard

1 tbsp balsamic vinegar

2 tbsp extra-virgin olive oil

2 tbsp minced fresh rosemary

3 garlic cloves, minced

1 ½ tsp kosher salt

2 American Lamb racks, frenched


1 garlic clove

2 tbsp extra-virgin olive oil

½ tsp dried oregano

1-2 tbsp red wine vinegar

2-3 fresh tomatoes, crushed

1 tbsp lemon juice

1 tbsp chopped fresh mint

1. For the lamb: Combine the mustard, vinegar, oil, rosemary, garlic and salt. Place the lamb in a roasting or sheet pan with the ribs curving down; coat the tops with the mustard mixture. Cover and marinate at room temperature for 1 hour.

2. For the sauce: In a small bowl smash the garlic clove with a pinch of salt. In a food processor, combine the smashed garlic and ¼ cup water along with the oil, oregano, vinegar, tomatoes, lemon juice, and mint and blend for 1 minute. Transfer the sauce to a serving dish.

3. Preheat the oven to 450°F. Roast the lamb for 20 minutes.

4. Remove the lamb from the oven, cover it with aluminum foil, and let the meat rest for 15 minutes.

5. Cut the lamb into individual ribs (“lollipops”) and serve them with the Minted Tomato Sauce and pesto sauce.
