Enjoy Making Delightful Holiday Recipe Memories like Fruitcake and Blood Orange Holiday Punch

The holiday fruit cake has been a traditional gift for centuries. Though a thoughtful and generous treat, more often than not, holiday fruit cakes find themselves in the bottom of the trash bin. But not this year! For the holidays, SKYY Vodka has partnered with Michelin-starred pastry chef Ryan Butler to give the tired fruitcake a much-needed upgrade.

Ryan has been kind enough to share his recipe that is definitely not your grandmother’s fruitcake. By replacing rum or whisky with SKYY Infusions Blood Orange Vodka (made with real blood oranges) and a hint of spice and caramel, the result is a light, sweetly balanced and delicious dessert.

Fruit Soak

1 1/2 cup diced pineapple

1 1/2 cup golden raisins

1 cup dried apricot

1 cup dried cherries

1 cup candied orange peel

¾ cup SKYY Infusions Blood Orange Vodka

 

Fruit Soak Instructions

  • Chop the dried fruit peel and the pineapple into small diced pieces
  • Add the fruit and the vodka to a container
  • Allow to soak overnight
Batter

1 cup unsalted butter

2 cups dark muscovado sugar

1 tsp. of salt

1 tsp. ground cinnamon

1/4 tsp. ginger powder

¼ tsp. nutmeg

1 tsp baking powder

4 eggs

3 cups all-purpose flour

2 tbs. cocoa powder

¼ cup agave nectar

1 cup chopped pecans

¼ cup toasted pumpkin seeds

Cake Instructions

  • Pre-heat the oven to 375 degrees
  • Cream butter and dark brown sugar together until light and fluffy
  • Add the spices, cocoa powder baking powder and salt. Mix thoroughly
  • Add eggs one at a time, scraping down the sides of the mixing bowl
  • Add the flour, agave nectar, and the fruit mixture until a smooth batter is formed
  • Add chopped pecans and pumpkins seed-mix throughout
  • Deposit the batter into 6×3 inch loaf molds, filling half way
  • Bake for 30 minutes, rotating every 7 to 8 minutes

 

Soak Glaze

2 tbs SKYY Infusions Blood Orange Vodka

½ cup apple cider

1 star of anise

Glaze Instructions

  • Pour soak glaze mixture over the cake while still warm
  • Cool completely

8 oz. SKYY® Infusions Blood Orange Vodka

4 cups Prosecco

Juice of 4 blood oranges

2 cups orange juice

8 stems rosemary

Ice

Combine vodka, prosecco, and orange juice in a bowl. Strain through a fine mesh strainer and into a pitcher. Add rosemary to the pitcher. Pour over ice.
