Now you can sip your dessert at the Bar at Bohanan’s and Bohanan’s Prime Steaks and Seafood, the restaurant and bar that founded the San Antonio Cocktail Conference and helped inspire San Antonio’s thriving cocktail community, continue to set trends in the industry by offering a new cold brew coffee cocktail, the Carajillo. The restaurant is the first and currently only spot in the United States dispensing the modern pre-batched cold brew version of the cocktail, described as “dessert in a glass” thanks to its flavor profile.
The result of relationships built during the San Antonio Cocktail Conference, the cold brew Carajillo was crafted with James Mireles, owner of San Antonio-based Pulp Coffee, a wholesale private label manufacturer that creates coffee for other companies, including Bohanan’s and sister restaurant Peggy’s on the Green.
A classic after-dinner coffee drink, the Carajillo is made with brandy, whisky or anisette in Spain. The drink is also popular in Mexico where it combines the strength and bitterness of espresso coffee with the spicy sweetness of Licor 43. A liqueur that features a complex, but harmonic flavor profile, Licor 43 includes citrus, botanics such as coriander, nuances of vanilla and soft notes of Mediterranean orange and lemon blossom.

Bohanan’s worked with Pulp Coffee’s James Mireles to customize the drink, trying different coffee roasts and blends to the mix before settling on just the right flavor profile.
The Carajillo available at Bohanan’s is made with a nitrogen dispenser to create the foam. The coffee is an Ethiopian blend, providing a darker brew that’s a perfect match for Licor 43. Featuring a shot of expresso and a shot of Licor 43, it’s a potent combination. Both the coffee and the liqueur stand out, providing a perfect cocktail for coffee lovers to enjoy at Bohanan’s.
