Infusing Food with Fire & Flavor Enhances Home Cooked Meals

Fire & Flavor all started with one woman’s quest to find a way to enhance her home cooked meals. Wanting a way of infusing food with flavor, Gena Knox, an avid griller and Southern cook, turned to an age-old Native American cooking technique, cedar plank grilling. What she found was that not only was the food more flavorful, this way of cooking was also easy and healthy. Foods grilled on a cedar planks developed a fantastic smoky flavor, were simple to prepare and the planks made a beautiful presentation.
The cedar grilling plank was how Fire & Flavor was born, but since opening, the company has been developing new products. I was recently asked to try some Fire & Flavor products and was sent a package containing two Cedar Planks, Fire & Flavor’s signature product, a package of Cedar Wraps, a jar of Seafood Seasoning, a jar of Salmon Seasoning, and a jar of Chicken Dry Brine.
Since I am without a grill at the moment, I got to try both the cedar planks and wraps in my oven. Both the planks and wraps need to be soaked in water before putting the on the fire to keep them from burning. The directions suggest soaking the planks for an hour and the wraps for 5 minutes. You can do this while preparing your meal.
After soaking the plank place it on a 350 degree preheated grill or oven, cover grill or close oven and let plank heat 3 minutes then flip the plank. Add food to the plank, close cover or oven and cook until done. There is no need to flip or turn your food. These planks, made from all natural western red cedar from British Columbia, really added intense, smoky flavor to my salmon. Before cooking my fish, I used the Salmon rub on the filets. Cook time was about 10-12 minutes and the fish come out moist & smoky from the plank with the rub adding another layer of deliciousness with its Ancho chili and cumin spices with a hint of sweet. The presentation it made served on the plank branded with the Fire & Flavor logo was very impressive. A perfect meal to serve for guests. I’m pretty sure I won’t be able to eat salmon any other way now? The planks are a large 5.5″ x 15″ making it easy to cook a nice size steak or portion of fish.
I used the cedar wraps, also made from the same Western red cedar as the planks, to cook sliced peppers and onions lightly seasoned to go with the fish. I added about 2 tsp. of olive oil to the veggies. Next time I will probably add soy sauce or balsamic vinegar for another level of flavor. These wraps were easy to work with and large enough for an ample, single-serving size portion. After wrapping around the veggies and tying a string around the wrap, just place seam side down on a grill pan in an oven and let it cook about 10-15 minutes. If using a grill, you can place the wraps directly on the grill and let cook about 3-4 minutes. The wraps enhanced the vegetables with a delicious smoky flavor. Cedar Wraps come in a package of 8 along with 8 strings for tying.
I am going to try cooking cod in the wraps next as I think it will add a nice robust smokiness to this white fish.
