I use balsamic vinegar quite often when cooking because I love the flavor it adds to dishes. Casa Rinaldi’s Balsamic Vinegar Cream is now my favorite balsamic vinegar. In fact, I am now in love with this product. The vinegar itself is thicker, almost like caramel, than most others I have used, giving it a concentrated flavor. It has a rich grape must taste which is both sweet and savory at the same time. It also pulls an intriguing woody taste from the wood barrels in which it is aged. The smell is pleasantly pungent, and its color is deep brown.
The vinegar comes in an easy open and squeezable non-breakable bottle which makes it convenient for measuring and pouring. It is great to use on fish, meat, chicken, pasta, salads, veggies and even desserts like poached pears, fresh fruit and ice cream. Yes, I find it to be very versatile! Below I have attached a recipes for both a roasted vegetable dish and a chicken dish using Balsamic Vinegar Cream of Modena which got raves from my family. I hope you will give them a try.
Elizabeth Baird’s Balsamic-Glazed Chicken Breasts

6 skinless boneless chicken breasts
1tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
2 tsp vegetable oil
2 Tbsp Balsamic Vinegar Cream of Modena – Casa Rinaldi
1 tsp liquid honey
1 Tbsp butter, cut into bits
Sprinkle both sides of chicken breasts with thyme, salt and pepper. In a large skillet, heat oil over medium-high heat. Add chicken, placing it smooth-side down; cook for 2 minutes or until Browned. Turn and brown lightly on underside. Transfer to a plate.
Pour 1/3 cup water, balsamic vinegar and honey into the skillet; bring to a boil over high heat, stirring to scrape up any brown bits from the bottom of the pan. Boil for 2 minutes or until slightly syrupy and reduced by half. Add butter; stir until melted.
Reduce heat to medium-low. Return chicken, smooth-side-down, to pan; cook, turning halfway through, for about 6 minutes or until glazed and no longer pink inside. Serve drizzled with glaze.
Easy Roasted Vegetables
Makes 4 servings
When roasting vegetables, cut pieces all the same size so they’ll cook evenly. And be sure vegetables aren’t crowded in the pan or they’ll steam instead of roast.
Note: I substituted sliced almonds for the pine nuts.
2 medium zucchini, sliced
2 medium-size yellow squash, sliced
1 red bell pepper, cubed
5 garlic cloves, crushed
2 Tbsp olive oil
1 tsp salt
1/2 tsp freshly ground pepper
1 Tbsp Balsamic Vinegar Cream of Modena – Casa Rinaldi
2 Tbsp pine nuts, toasted
8 fresh basil leaves, cut into very thin strips
Combine first 4 ingredients in a large bowl; drizzle with oil, and sprinkle with salt and pepper. Toss well. Place vegetable mixture in an ungreased 15 x 10 inch jellyroll pan. Bake, uncovered, at 500 degrees for 10-20 minutes. Remove vegetable from oven, and toss with vinegar, pine nuts, and basil. Serve immediately.
