- 6 Sundried Tomatoes, drained
- 2 Tbsp. Gaea’s Kalamata D.O.P. Greek Extra Virgin Olive Oil
- 1 cup finely chopped red onion
- 2 garlic cloves, finely chopped
- 1 medium cauliflower 2.75 pounds, trimmed and cut into florets

Add the bay leaves, cinnamon, and orange zest. Season lightly with salt and pepper. Reduce the heat to low, cover and simmer for 20 minutes. Add the sun-dried tomatoes. Cook another 5 minutes, then add the olives. Stir gently. Cook another 5 minutes for the olives to warm through and the flavors to meld. Taste for seasoning, add salt and pepper accordingly, and stir in the parsley.
