Gaea Olive Oil is Celebrating National Olive Oil Day this August with Summer Recipes

Cucumber Salad with Fresh Herbs, Orange Segments and Citrus Dressing

Ingredients

  • 6 small cucumbers
  • Natural Sea Salt
  • For dressing:

o   1/2 cup Gaea’s Sitia, Crete D.O.P Greek Extra Virgin Olive Oil

o   Juice of 1 lemon

o   Salt

o   Fresh ground black pepper

o   Fresh ground pink pepper

  • 2 large oranges
  • 1 Tbsp. fresh rosemary
  • 1 Tbsp. fresh oregano
  • 1 Tbsp. fresh thyme
  • 1 Tbsp. fresh mint

 

Directions

Wash cucumber and oranges well. Peel oranges, remove white membrane and cut fresh in thin slices. Thinly slice cucumber with a mandolin. Combine salt and two kinds of pepper in glass or stainless steel bowl and add lemon juice. Slowly add Gaea olive oil while stirring constantly with wire whisk. Combine dressing with orange slices and fresh herbs. To serve: Arrange cucumbers in dishes and pour over prepared dressing. Sprinkle with a little coarse salt.

Cauliflower Braised with Tomatoes and Cinnamon

Ingredients

  • 6 Sundried Tomatoes, drained
  • 2 Tbsp. Gaea’s Kalamata D.O.P. Greek Extra Virgin Olive Oil
  • 1 cup finely chopped red onion
  • 2 garlic cloves, finely chopped
  • 1 medium cauliflower 2.75 pounds, trimmed and cut into florets
  • 1 cup chopped plum tomatoes, with their juices
  • 2 bay leaves
  • 1 cinnamon stick
  • 2.50 cm/1-inch piece of orange zest
  • Salt and freshly ground black pepper
  • 12 Pitted Green Olympian olives, drained
  • 2 tbsp. chopped flat-leaf parsley

 

Directions

Place the sun-dried tomatoes in a bowl with 1 cup of warm water to soak for 1 hour. Remove, drain, coarsely chop, reserve the water, and set aside. Heat 3 tablespoons Gaea olive oil in a large, wide pot over medium heat, add the onion and garlic and cook, stirring, until wilted, about 8 minutes. Add the cauliflower florets, toss to coat in the oil, then add the tomatoes. Stir gently. Add enough water to come about 3/4 of the way up the cauliflower. Add the bay leaves, cinnamon, and orange zest. Season lightly with salt and pepper. Reduce the heat to low, cover and simmer for 20 minutes. Add the sun-dried tomatoes. Cook another 5 minutes, then add the olives. Stir gently. Cook another 5 minutes for the olives to warm through and the flavors to meld. Taste for seasoning, add salt and pepper accordingly, and stir in the parsley. Remove the bay leaves, cinnamon, and orange zest, drizzle with a few drops of olive oil and serve, either hot or at room temperature.
