Chef Puts Eclectic Twist on Classic Recipes

Looking for a quiet, cozy place to pop into on the beaten path in downtown San Antonio? A place where you can meet after work with friends, enjoy a classic cocktail and bar bites before a theater production, or just sit and contemplate what you want for dinner upstairs.
The atmosphere is old world classy with over-stuffed leather wing chairs, bar seating or tables either inside or outside on the patio. The music is Jazz, R & B or contemporary for your relaxing and visiting pleasure.
Bohanan’s Bar is just the place! Here you will find cocktails which are shaken, stirred, on ice or tall with soda along with amazing small bites to curb your appetite. Chef Heather Nañez has put together a bar menu redoing old favorites like tuna salad and bringing it back to life as Tuna Tacos; layering seared Sashimi grade tuna, cole slaw and avocado mixed with a spicy mayonnaise atop a Jicama tortilla. It is both lighter and more flavorful than the original favorite.
You can find a new spin of radishes and butter on chef’s version; fresh radishes dipped in real butter then flash frozen just to set the butter and served with sea salt. Such a simple treat yet so delicious.
Now, my absolute favorite was Chef Heather’s revision of the classic crab stuffed avocado. Here she uses colossal lump crab with tomatoes, roasted corn and cilantro mixed with mayonnaise and stuffed in an avocado half. I know this sounds very similar to the classic we are familiar with, but chef presents her version flipped upside down with the avocado half sliced and put back together. A great presentation for this dish and the chef gets kudos from me for this one.
Of course, you can’t have bar bites here without imbibing on one of Bohanan’s signature cocktails. Whether they are shaken or stirred, they are quite simply the best. The bar staff at Bohanan’s was trained by Sasha Petraske, one of the major players in the “cocktail renaissance” in New York, reintroducing the City to pre-Prohibition recipes meticulously made with perfect ingredients.
One such cocktail is the Ivy Gimlet which combines vodka, lime juice, sugar and mint. A very refreshing summer cocktail for the last days of summer, making a stunning presentation in the classic cocktail glass with crushed mint.
