I was asked to take the Veestro’s Summer Slim Down Challenge. Eat Veestro pre-cooked and ready to eat meals for five days, three times a day, breakfast, lunch & dinner, and see how I felt.
After thinking about it for a couple of days I said sure I can do this for 5 days. However I was a little nervous about it. This was going to be vegan meals for 5 days and I had never done vegan before, except the one time during a chef competition and that was just a sampling of vegan dishes one day. Actually only a couple of hours. So how was this carnivore going to do this for 5 days?
Then the meals showed up and they had names like Soba Noodles With Peanut Sauce, Kale and Quinoa Salad with Tempeh Bits (one of my favorites) and Oatmeal Breakfast Pie. Not only did they sound gourmet, they looked pretty darn good too. Each meal was labeled with it’s nutritional facts and dietary information making it easy to cater to your individual dietary restrictions.
So I set my schedule, prepared separate meals for my husband for the next five days and the next morning started the challenge! *A Note here: I decided to take the challenge to see if I would feel different on a vegan diet; more energy, fewer allergies, improved digestion, that sort of thing. I didn’t do this for weight loss.
I found each meal surprisingly good and all were very filling. I was eating three meals a day, breakfast, lunch and dinner, which I usually never do on a regular basis. And each meal, even the juice I had for a breakfast potion one morning, was very filling. In fact I think I was eating less at each meal but feeling fuller. A few times I had to force myself to finish a meal because I was already full.
And this was kind of like a kitchen vacation, if you will. I loved the convenience of just choosing a meal, defrosting, heating it and then sitting down to eat. In fact, I miss that pop in the oven and ready to eat mode. It was also comforting to know I was getting something fresh and healthy at the same time.

I did like that there was a diverse choice of meals like the Red Curry with Tofu and Vegetables with its blend of chunky vegetables in a spicy curry paste, the Three Layer Scramble with its savory Tex-Mex flavors and the yummy Vege Burger Patty with its chunky vegetables, black beans and flavorful brown rice. This kept the challenge from getting boring by satisfying my international palate.

So, how did I do on the challenge? I felt good for the whole 5 days, no cravings for meat, sugar or dairy. My first day I was a little lethargic at the end of the first day, but that was all I noticed. I didn’t notice any of the usual side effects like headaches I get when coming off sugar, thank goodness. My digestion improved but I noticed no difference in allergies, but I don’t think my allergies come from food. At the end of day five I didn’t really notice an increase in energy, but then I am usually always full of energy. Lastly, I lost 6 lbs. on the 5 day challenge. Note: (I do work out moderately and I increased my workouts slightly as I didn’t want to lose muscle during the five days.)
All in all, I felt good during the challenge. I was always full, never hungry, and was happy that I was eating three healthy meals every day. But the best thing was knowing I didn’t have to come home, spend an hour or longer preparing a nutritious meal and then getting to finally sit down to eat. I loved the convenience and I miss my mini kitchen vacation.
