Glendalough Rose Gin ($34.99)

Glendalough distills wild Wicklow and Heritage rose petals with botanicals in a pot still to craft a unique, small-batch gin. Given the delicate ingredients, Glendalough Rose Gin is distilled even slower and more gently, with vapor distillation playing a bigger part extracting essential oils and floral notes. After distillation, it is further infused with even more roses to deepen the flavors and impart a lovely pink hue.  The Rose Gin was created as a way for Glendalough Distiller, Rowdy Rooney, to honor his mother. Mother Rose loved her rose garden, so after her passing, Rowdy bottled her memory in the form of a light, floral and flavorful rose gin.

Glendalough Wild Gin ($34.99)

They forage wild plants from the mountains around the distillery to make this extraordinary gin. These sustainably picked plants go fresh (not dried) into the still within hours of foraging. They are painstakingly slow-distilled to tease out delicate flavors in tiny batches. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first, putting this gin on a whole other level of flavor. The knowledge, experience and effort that goes into each bottle is what makes it so special. Try it in a G&T garnished with a wedge of grapefruit and a freshly torn sprig of basil. Or try it in a Tom Collins.
