The Grill at Leon Springs Invites You to this New Dining Concept
Chef Thierry Burkle invites you to join The Grill at Leon Springs as he hosts a new, amazing Gastronomy Dinner that is meant to open your mind to new possibilities.
It’s time to discover a new type of dining experience. The Grill at Leon Springs has started a Gastronomy Dinner made for the inquisitive and adventurist diner in mind. Open your mind to a new concept. Chef Thierry asks for you to join him once a month for a deliciously prepared dinner paired with great wines from across the globe to compliment each course. He also asks that you come with no expectations other than enjoying his acclaimed dishes and the company of other diners who also enjoy great food. In this way, Chef Thierry hopes you will allow your gastronomic senses to come to life and appreciate food in a new way. Allow yourself to be transported by the textures, flavors and aromas of each dish.
The first of the Gastronomy Dinners took place May 15th at 24116 I-10W, San Antonio, Texas from 7-9pm to a full house. The dinner consisted of 5 courses paired with wine. The menu was not pre-announced before hand so diners would not have any preconceived expectations of the food. The menu consisted of the bounty of flavors from ingredients at the height of the spring season.
Chef started us off with a First Course of a rich, creamy Carrot, Curry, Coconut Bisque topped with a delicate Crab Fritter. The smell of this dish was so deliciously fragrant my mouth started to water as soon as it was set in front of me. Paired with a 2015 Torresella Pinot Grigio from Italy which offered just a hint of aromatic fruitiness to let the bisque shine, we were off to a delicious start.
The Second course offered some seafood delights. Here we had large Scallops atop a Broccoli puree with thick slices of Trumpet Royal mushrooms. Top all this with China Sea Smoked Trout, tomato slices and Lemon Confit for a delightfully aromatic, slight earthy dish. Served with a glass of Sacred Hill 2014 Pinot Noir from New Zealand with its aromas of red fruit and savory, earthy notes that complimented the smokiness of the trout and the trumpet mushrooms, it was a perfect match.
Burrata Cheese with Pear Triology (pear puree, diced pear and a pear sauce), was the Third course. Add to that a Molasses Granola and fresh tomato slices and you have a sweet, refreshing twist on a Caprese salad. This also went well with the Torresella Pinot Grigio.
Next was a Celery Root Puree with a very tender and savory Duck Galantine sweetened with a Port Dattes Gastric to enhance the meat. This was paired with a 2017 Amalaya Malbec from Argentina. The dark fruit flavors of this juicy, full bodied wine stood up well with this dish. I am a duck fan and really liked the way this dish came together.
The finale, or dessert course was light, creamy, zesty, fragrant and just sweet enough to not overdo. This Sage Lemon Gelato with Rhubarbe coulis and Ginger Snow was refreshing and perfect for a sweet ending. Chef even added a small Meringue and Toasted Almonds for some crunch and pizzazz. This I paired with a cup of coffee. Perfect!

Chef Thierry, having started his culinary career in Paris, has been a well known and respected chef in the San Antonio dining scene for many years. His first restaurant here, L’Etoile on Broadway, opened in 1984. After closing in 2009, Chef Burkle soon opened The Grill at Leon Springs.
