Orange You Ready for a Little Spicy Flavor this Summer

This summer, orange you ready to ditch the store-bought staples and take your basic backyard barbecue to the next level? Fiesta Mole Sauce (see recipe below), made with Nielsen-Massey Pure Chocolate and Pure Almond Extracts, is surprisingly simple for home cooks of all skill levels, while wowing guests and gussying up your summer gathering. Serve it over shredded chicken and create Fiesta Mole Tacos that, when topped with two orange-infused extras, will leave your friends begging for doggy bags.

Avocados Aren’t Just for Millennials

An avocado accoutrement pairs well with Fiesta Mole Sauce, taking your dish from satisfying to off-the-charts. Orange-Infused Avocado Crema

Yield: ~1 1/2 cups
Prep Time: 15 min

1 large avocado, smashed
1 teaspoon Nielsen-Massey Pure Orange Extract
1 cup sour cream
2 teaspoons lime juice
kosher salt, to taste
ground black pepper, to taste

Combine all ingredients and mix well. For smoother consistency, place in blender or mini food processor and blend until smooth.


All Corny Puns Aside

Since you’re firing up the grill for a barbeque, throw on some corn and make Orange-Infused Roasted Corn Salsa. Amazing maize is the centerpiece of this orange-forward salsa that will pair well with the chocolate flavors in the Fiesta Mole Sauce.

Orange you Ready for Orange-Infused Roasted Corn Salsa

Yield: ~1 1/2 cups
Prep Time: 15 min

1/4 teaspoon Nielsen-Massey Pure Orange Extract
1 cup roasted corn kernels
1/4 cup small-diced Roma tomatoes
2 tablespoons minced grilled red onion
1 tablespoon pureed roasted garlic cloves
1 teaspoons minced jalapeño (roasted, peeled and seeded)
2 teaspoons minced fresh cilantro, minced
1 tablespoon + 1 teaspoon fresh lime juice
1/4 teaspoon smoked sea salt
1/8 teaspoon ground cumin
Pinch of ground coriander

Combine all ingredients including Nielsen-Massey Pure Orange Extract and mix well.

Chef’s tip – For grilled onions, cut onions into 1/2-inch thick slices, making sure to leave them whole with all the rings still together. Lightly brush with oil and grill slices over medium high heat until grill marks are made. Remove from grill and let cool slightly.

Fiesta Mole Sauce

Orange you Ready for Mole Sauce

1 tablespoon vegetable oil
1 poblano chile, chopped
2 cloves garlic, chopped
1 small onion, chopped
1 tablespoon chili powder
1 cup chicken stock
1 teaspoon Nielsen-Massey Pure Chocolate Extract
1 teaspoon Nielsen-Massey Pure Almond Extract
1 teaspoon salt
1/2 teaspoon cinnamon
scant 1/4 teaspoon cloves
2 tablespoons raisins
1 cup crushed tomatoes

Heat the oil in a medium-sized frying pan and add the chile, garlic and onion. Saute until the mixture is fragrant and the onion is translucent. Cool slightly and add to a blender. Blend until smooth. Return the mixture to the pan and add the remaining ingredients and cook, stirring occasionally 30 minutes.

Use the mixture to top grilled baked or shredded chicken or turkey.

Serves 4
