Gwendolyn Summer Menu is Like a Trip to Greece

Gwendolyn summer menu is taking guests on a summer vacation to Greece with their new Mediterranean inspired lunch menu. While abroad, Chef Andreas serves as a tasting tour-guide back in time to a pre-industrial kitchen before motors and food-processors spoiled the integrity of the carefully cultivated food Gwendolyn is known for.

Menu highlights:
  • Falafel with tzatziki sauce and pita
  • Beef moussaka
  • Pork gyro
  • Hummus and pita
  • Lokmas in honey syrup served with rosemary frozen yogurt
Entrees are served with a cucumber and tomato salad with kalamata vinaigrette.

Be prepared to be wowed and inspired at Restaurant Gwendolyn. Their concept is to keep things fresh, local and sustainable. Every perishable ingredient they serve here comes from within 150 miles of this place, was raised in the old way, and has been handled in the old way. They know the rancher, and they know the farmer. They buy from them directly to keep the supply chain small and visible.

They buy whole animals, cut and dry-age them themselves, and preserve them in the old, tried-and-true ways of the Victorian age, and the traditions that came before them. They smoke their own bacon, grind their own sausage, make their own orange marmalade, and can strawberries in the springtime. All fats used here they either rendered themselves, or have been naturally crushed from a seed.

Any traditional ingredient that traveled long distances in wooden wagons in 1850–wine from Bordeaux, pepper from Malabar, coffee and sugar from the West Indies–is okay by them. They didn’t kill people then, and they don’t now. When possible they will favor Texan products in this also, because money spent in your community stays in your community.
