Tajin Celebrates this Memorial Day with Spicy Recipes

S. Kyles´s Strawberry Kiwi Ceviche

INGREDIENTS:
  • Ceviche Marinade
  • ¼ cup chopped strawberries
  • 2 tablespoons olive oil
  • 1 Roma tomato
  • 1 tablespoon red wine vinegar
  • Juice of two limes
  • ½ tablespoon Worcestershire sauce
  • Ceviche
  • ½ Ib shrimp (peeled, deveined, boiled and diced)
  • ½ Ib scallops (boiled, cooled & diced)
  • ¾ cup diced red onion
  • 1 cup diced English cucumber (seeded)
  • 1-2 Diced Jalapeño peppers (seeded & deveined)
  • 1 cup fresh strawberries (diced)
  • 1-2 Kiwis, depending on size (peeled & diced)
  • ¾ cup small diced jicama
  • 4 tablespoons. chopped cilantro
  • 1 avocado (garnish)
  • 1 ½ tablespoons TAJÍN® Clásico Seasoning (to taste)
PREPARATION:
  1. -Combine all marinade ingredients in a blender and pulse until smooth.
  2. -Once all ingredients are prepped and marinade is made, toss shrimp, scallops, cucumber, onion and jalapeño with the ceviche marinade dressing.
  3. -Cover and chill or refrigerate for 30 minutes to an hour.
  4. -Right before serving, add strawberries, kiwi, jicama, & cilantro. Fold everything together gently but thoroughly. Garnish with a slice of scallop, lime wedge, avocado and cilantro sprigs.

 

Tajin Celebrates with Soft Shrimp Tacos with Mango Slaw

INGREDIENTS:
  • Dressing:
  • 3 tablespoons mayonnaise
  • 1 teaspoon Sriracha hot sauce
  • 1 tablespoon TAJÍN® Clásico Seasoning
  • 1 tablespoon lime juice
  • 1/2 teaspoon sugar
  • 1/2 bunch cilantro leaves
  • Taco Ingredients:
  • 3/4 lb. medium shrimp, peeled, deveined and halved crosswise
  • 2 cups coleslaw, prepackaged mix
  • 1 mango, peeled and sliced into thin strips
  • 1/2 small red onion, thinly sliced
  • 2 tablespoons canola oil
  • 12 corn tortillas
  • 1/2 Bunch of Cilantro leaves
  • 1 lime, cut into wedges
  • Salt and Pepper to taste
PREPARATION:
  1. -Combine all dressing ingredients in a food processor and process until smooth.
  2. -Roughly chop remaining cilantro and combine with coleslaw mix, mango and red onion. Season with salt. Toss with dressing.
  3. -Heat oil over medium high heat. Add shrimp and cook until opaque (about 3 minutes).
  4. -Place shrimp and the coleslaw mixture in each tortilla and add the rest of the dressing.
  5. -Serve with lime wedges.

 

BLT Cold Quesadilla

INGREDIENTS:
  • 4 ounces / 112 g cream cheese, at room temperature
  • 1/2 cup / 120 ml mayonnaise
  • 1 tablespoon / 15 ml TAJÍN® Clasico Seasoning (or TAJÍN® Clasico low sodium)
  • 1 cup / .25 liter roma tomato, seeded and sliced thin
  • 6 slices bacon, cooked and crumbled
  • 4 each flour tortillas
  • 1 1/2 cups / .33 liter shredded iceberg lettuce
PREPARATION:
  1. -Combine cream cheese, mayonnaise and TAJÍN® Clásico Seasoning.
  2. -Gently stir in crumbled bacon.
  3. -Taste. Add more Tajín if desired.
  4. -Spread mayo mixture on two of the tortillas.
  5. -Top with a layer tomato slices slightly overlapping and then lettuce.
  6. – Spread a thin layer of mayonnaise on the second tortilla and then place on top of lettuce.
  7. -Wrap and chill at least one hour until firm.
  8. -Cut into quarters using a serrated knife.
