Celebrate the rites of spring and the freshness of fruits and vegetables straight from the garden at the Witte Museum on Wednesday, April 8th. Chef Jose Cruz and his wife Tiffany own and operate Señor Veggie and will share with guests the highlights of vegetarian cooking using the season’s freshest choices, and discuss how to consistently and affordably be able to do so yourself. Mitch Hagney with Local Sprouts will also join the conversation about urban farming in San Antonio and how non-traditional methods of gardening can allow anyone to grow fresh fruits and vegetables. Each course will be paired with wine from the Bending Branch Winery located in Comfort, Texas.

Wild Arugula Salad with White Wine Shallot Vinaigrette, Heirloom Tomatoes and Hydroponic Sprouts

Second Course
Roasted Fennel in Sweet Onion broth with Soft-ripened Herbed Pecan Cheese and Toasted Garlic Crouton

Third Course
Mesquite Smoked BBQ Tempeh (The Hearty Vegan- Austin, Texas) and Delicata Squash Gratin served with Texas Pole Bean Succotash

Fourth Course
Flourless Chocolate Torte with Wild Strawberries and Fresh Berry Coulis
