TREFETHEN FAMILY VINEYARDS: Napa Valley

Thursday, July 10 at 6:30 p.m.

One Family. One Estate. One Passion. Since the late 1960’s, the Trefethen family has been committed to estate production; they are adamant that they should be the ones growing the grapes and turning them into wine. Their passion requires it. The winery produces a diverse range of award-winning varietal, blended and reserve wines – all from their Napa Valley estate – that exhibit the classic hallmarks of fine wines: richness with elegance, concentration with finesse, complexity with harmony and sophistication with approachability. Spend an evening with the winemaker, learning about the family, the techniques and the tradition. Students will enjoy a succession of small plates that includes:

  • Pan roasted oysters paired with Trefethen Dry Riesling
  • Lettuce wraps with chicken and charred corn paired with Trefethen Chardonnay
  • Risotto with porcini mushrooms, red wine, sage and parmigiano reggiano paired with Trefethen Merlot
  • Seared duck breast with black plum sauce paired with Trefethen Dragon’s Tooth
  • Tuscan steak with roasted sweet potatoes and cumin paired with Trefethen Cabernet
  • Cheese plate with piave vecchio, an aged brie and parmigiano reggiano
  • Shortbread and chocolate cookies.

FOOD & WINE OF PARIS

Friday, July 11 at 6:30 p.m.

  • Moules Marinières (Mussels in White Wine);
  • Endive, Pear & Roquefort Salad;
  • Steak Au Poivre (Pepper Steak with Brandy Sauce);
  • Pomes Persillade (Potatoes with Parsley & Garlic); and
