Let’s get right the point – The Chinese New Year is this Friday but celebrations continue to mid-February.  Celebrating or not, here are some delicious and healthy Asian inspired recipes that will make any family, friend get together or celebratory meal easy and having guest coming back for seconds…guilt free.

With San-J’s variety of gluten free sauces from Tamari and Thai Peanut to Szechuan and Teriyaki, there will be no shortage of easy to make, delicious meals for family and friends.

Inspired by San-J’s well-known gluten free Tamari and Asian Cooking Sauces, these recipes were created by culinary nutritionist, Editor-in-Chief of The Healthy Apple, Amie Valpone. Specializing in clean eating and gluten-free nutrition, Amie created these three easy to prepare dishes in time for the holiday. Filled with fresh ingredients including kale and cranberries, they are a perfect way to spice up the New Year.

Recipe for a Healthy, Gluten Free Chinese New Year Celebration:

Spicy Peanut Basil Chicken (San J’s Thai Peanut Sauce)

Serves 4

Spicy Peanut Basil Chicken

INGREDIENTS

1/2 cup San-J Thai Peanut Sauce
1/3 cup olive oil plus additional for brushing
4 large garlic cloves, minced
1/4 tsp. cumin
Juice from 1 lime
1/2 tsp. lime zest
1 small sweet onion, sliced into ½ inch pieces
4 fresh basil leaves, finely chopped
1/4 cup fresh marjoram, finely chopped
1/4 tsp. sea salt
1/4 tsp. freshly ground white pepper
1 tsp. dried hot red-pepper flakes
4 skinless, boneless chicken breasts

INSTRUCTIONS

In a large bowl, combine San-J Thai Peanut Sauce, olive oil, garlic, cumin, lime juice, lime zest, onion, basil, marjoram, sea salt, pepper and red-pepper flakes; mix well to combine until mixture resembles a marinade. Transfer marinade to a large sealable bag. Add 4 chicken breasts, seal bag and marinate chicken in the refrigerator for 3 hours. Preheat oven to 450°F.

Line a baking dish with foil and brush with olive oil. Remove chicken from bags and place into prepared baking dish. Transfer marinade to a small pot; discard bags. Roast chicken in the oven for 15 minutes, flip breasts and rotate position of baking dish to ensure even baking. Bake for another 20 minutes or until chicken is golden brown and no longer pink inside.

Meanwhile, heat marinade over medium heat until boiling; simmer for 25 minutes. Remove chicken from oven; transfer to a serving platter. Discard foil.

Remove marinade from heat; drizzle over chicken; serve remaining marinade as a sauce on the side.

Kung Pao Pork (Szechan Sauce)

Serves 4

Kung Pao Pork-2

INGREDIENTS

1 pound pork tenderloin
1/4 plus 1 tablespoon roasted peanuts, use divided
2 tablespoons vegetable oil
8 Thai chilies
3 green onions, cleaned, trimmed and sliced
1/4 cup San-J Szechuan Sauce

INSTRUCTIONS

Trim the pork tenderloin of all visible fat and cut into 1 inch cubes. Roughly chop 1 tablespoon of the peanuts and set aside for garnish.

Heat the oil in a large skillet or wok over high heat until it begins to shimmer. Add the pork and cook for 4 minutes turning frequently to brown on all sides. Add the remaining 1/4 cup peanuts, chilies and 2 of the green onions, cook for 30 seconds, stirring constantly. Add the San-J Szechuan Sauce and cook for 1 minute, stirring constantly. Serve immediately garnished with the chopped peanuts and remaining green onion.
